If you like the taste of Absinthe…

We used Imbibe’s take on this cocktail, which was adapted from “The Gentleman’s Companion” by Charles H. Baker, Jr., 1939. The book chronicles Baker’s journey around the world and the cocktails he tasted along the way – including this one, found in a bar in Havana in 1933.

YOU’RE GOING TO LOVE THIS COCKTAIL.

As far as flavor goes, the star of this cocktail is the Absinthe. The other ingredients beautifully round out the flavor, but there’s no mistake which ingredient takes center stage. I could almost see this described as an “Absinthe Manhattan”, though a touch sweeter than you’d expect from a Manhattan.

The Cherry Heering also adds a nice round cherry sweetness while playing nicely alongside the garnish.

Ingredients

  • 2 oz Rye Whiskey I used Bulleit
  • 3/4 oz Sweet Vermouth
  • 1/8 oz Absinthe I used Lucid Absinthe
  • 1/2 oz Cherry Heering

Instructions

  • Add all ingredients to a mixing glass with ice.
  • Stir to chill and dilute.
  • Strain into a cocktail glass and garnish with Maraschino cherries or brandied cocktail cherries.
