What do you do with Leftover Pumpkin Syrup?

We still have loads of our pumpkin syrup left over in the fridge, so it was only a matter of time before it made its way into another cocktail.

This drink is a take on the “Gold Rush” cocktail, with Cinnamon infused bourbon (instead of “normal” bourbon) and pumpkin syrup instead of honey.

The result is just about the perfect whiskey cocktail for fall. (But I’m being redundant – whiskey is the perfect spirit for fall!) Plus, it’s only three ingredients – what’s not to love?

This take on the Gold Rush cocktail uses our Pumpkin syrup to make it the perfect whiskey cocktail for the fall.

Ingredients

  • 2 oz Cinnamon Infused Bourbon I used Jim Beam’s Red Stag
  • 3/4 oz Lemon Juice
  • 3/4 oz Homemade Pumpkin Syrup See link in description above

Instructions

  • Add all ingredients to a cocktail shaker with ice.
  • Shake well.
  • Fine strain into a bucket glass with fresh ice.
