This cocktail is all about its inspiration – the Prickly Pear – and a simple sparkling cocktail – the Swizzle.
The Inspiration
We happened upon a huge display of ripe Prickly Pears in our local supermarket and I wasn’t surprised when I found a handful in our basket a few moments later. Lucky for me, I knew there’d be a great cocktail in my future!
The Swizzle
The Swizzle is an incredibly easy type of cocktail to make. This one has one additional “make ahead” step with the Prickly Pear Syrup, but since Chris used the “maceration” method, it’s also very simple – it just requires a little time. So chop up your Prickly pears, get them macerating in sugar and then you can enjoy this same cocktail in 3-5 hours when the syrup is done!
The Prickly Swizzle
Ingredients
- 2 oz Blanco Tequila
- 1 oz Prickly Pear Syrup
- 1/2 oz Lime Juice
- 4 oz Sparkling Water
- 6 dashes Old Fashioned Aromatic Bitters
- 1 sprig Sage, for garnish
Prickly Pear Syrup
- 2 ea Prickly Pears
- 3/4 cup sugar
Instructions
- Combine the first four ingredients in a cocktail shaker with ice
- Shake well
- Strain into a Collins glass
- Fill with crushed ice
- Top with sparkling water
- Stir in the glass to incorporate
- Add dashes of bitters across the top
Prickly Pear Syrup
- Remove skins of prickly pears and chop into small (1/2”) pieces
- Put fruit and sugar in a bowl
- Leave overnight
- Fine-strain.
