When Chris went about designing this drink, he was looking to create something bright and effervescent, but not too sweet. Too many bright summery drinks become overwhelmingly sweet – often because of their use of ripe fruit and juices.

This one is an attempt at refreshing simplicity. It’s a basic Sour, with the slight sweetness of the rum and 1/2 oz simple syrup standing up perfectly against the lime juice, alongside a top of sparkling water.

I would consider this a great “rum” alternative for vodka-cranberry or gin and tonic drinkers. Perfect for a hot summer day.

Rum and Lime Collins

Bright, simple and summery – this Collins variation is perfect for rum lovers.

Ingredients

  • 2 Oz White Rum Bacardi
  • 1 Oz Lime Juice
  • 1/2 Oz Simple Syrup
  • 3-4 Oz Club Soda

Instructions

  • Shake all ingredients with ice to chill and dilute.
  • Fine strain into a collins glass and top with club soda.
  • Garnish with Lime wheel and maraschino cherry
