The Official Cocktail of the Belmont Stakes

I’ll be the first to admit I’m not much of a horse-racing fan, but when the folks at Maker’s Mark kindly sent us their bourbon and invited us to give this cocktail a try – well, that’s persuasive enough for me!

I did a bit of research expecting to read about a long and established history of this cocktail at the Belmont Stakes… but it appears this is not the case. Unlike the Mint Julep and the Kentucky Derby, the Belmont Stakes has been through several “official” cocktails over the years – with the Belmont Jewel a relatively recent addition in 1998.

This cocktail is absolutely a winner: it only requires three ingredients, no fancy techniques, and can easily be made in large batches. (I can see why it’s the current drink of choice!)  So if you’re watching the Belmont stakes on June 11th, consider stocking up on pomegranate juice and lemonade and you’ll be ready to celebrate with this cocktail in style.
