This is only very slightly different from the classic Mojito, with a Demerara syrup instead of simple.

  • 1/2 oz Rich Demerara Syrup
  • 1 oz Lime Juice
  • 2 oz White Rum
  • 5-10 each Leaves of Mint
  • 2-4 oz Soda Water

Rich Demerara Syrup

  • 1/4 cup Demerara Sugar
  • 1/8 cup water


  • Add lime juice and mint to a cocktail shaker
  • Gently muddle
  • Add remaining ingredients and shake well
  • Dump into a highball glass
  • Top with Soda water

Rich Demerara Syrup

  • Heat the water to just before boiling and add the sugar.
  • Mix to dissolve
  • Cool before using
