Ingredients

Cocktail Ingredients

  • 1.5 oz Sotol
  • 1 oz Watermelon Shrub

Salted Watermelon Shrub Ingredients

  • 2 Cups Watermelon Chopped into ½” cubes
  • 1 ½ Cups White Sugar
  • 1 Ea Zest of One Lemon
  • ¼ Tsp Salt
  • 1 ½ Cups Maple Soju

Instructions

  • Pour the watermelon shrub into a shot glass.
  • Pour the Sotol into a second shot glass.
  • Drink the Sotol, then drink the watermelon shrub as a “back.”

Salted Watermelon Shrub

  • Add all ingredients except the vinegar to a bowl and mix well.
  • Macerate for one hour.
  • Add vinegar.
  • Let it sit for 24 hours, covered, in the fridge.
  • Fine-strain.
