Gin Fizz with Celery Lime Foam

This is a classic Gin Fizz with a bit of modern molecular technique on top.

Ingredients

  • 2 oz Gin Brockman's
  • 1 oz Lemon Juice
  • 3/4 oz Simple Syrup
  • 3 oz Soda Water
  • 2 inches Celery Lime Foam

Celery Lime Foam

  • 4 oz Water
  • 4 each Egg Whites
  • 2 oz Lime Juice
  • 1 1/2 oz Rich Demerara Sugar Syrup
  • 4 dashes Celery Bitters

Instructions

  • Add gin, lemon juice and simple syrup to a cocktail shaker.
  • Add ice and shake.
  • Strain into a Collins glass without ice.
  • Top with soda water, leaving an inch of space near the top .
  • Top again with celery foam from prepared ISI canister.

Celery Lime Foam

  • Add all ingredients into an ISI whipping canister.
  • Close it up and add a nitrous charge. Charge and shake.
  • When used up, add another nitrous charge and charge and shake again.
