Gin Fizz with Celery Lime Foam
This is a classic Gin Fizz with a bit of modern molecular technique on top.

Celery Lime Foam

Lime Juice

Rich Demerara Sugar Syrup

Celery Bitters
Instructions
Add gin, lemon juice and simple syrup to a cocktail shaker.
Add ice and shake.
Strain into a Collins glass without ice.
Top with soda water, leaving an inch of space near the top .
Top again with celery foam from prepared ISI canister.
Celery Lime Foam
Add all ingredients into an ISI whipping canister.
Close it up and add a nitrous charge. Charge and shake.
When used up, add another nitrous charge and charge and shake again.
