Apple Puree
  1. Add all ingredients except absinthe to a boston shaker
  2. Dry shake to build up egg white foam
  3. Add ice and shake to dilute and chill
  4. Double strain into a coupe glass
  5. Garnish with Angostura Bitters and drag a pick through drops to make a fun design
  6. Add spritz of absinthe
Apple Puree
  1. Add apple and sugar to a blender
  2. Puree until smooth
